UPDATE: A sudden drop in temperatures has hit Kimberton, PA, with wind chills plunging to around 17 degrees as of Tuesday morning. Residents are responding to the chill by turning to comforting meals, particularly homemade soups, to warm up during this stark shift into winter.
The first signs of winter arrived on Monday as clouds thickened and winds intensified throughout the day. By Tuesday, the cold had firmly set in, prompting many locals to prepare their homes and kitchens for the season’s cozy vibes. For Pam Baxter, an avid organic gardener in Kimberton, this weather signals the perfect time to whip up her favorite Butternut Squash Soup.
“There’s something magical about this time of year,” Baxter shared. “The garden is resting, and we’re looking ahead to Thanksgiving. It’s the perfect moment to gather with family and friends, and nothing warms the heart quite like a big pot of soup.”
Baxter’s Butternut Squash Soup is not only delicious but also quick to prepare, taking less than an hour to make. Here’s her simple recipe, guaranteed to keep you warm:
Butternut Squash Soup Recipe:
– 1 tbsp. olive oil or butter
– 1 small onion, chopped
– 1 tsp. of honey
– 1 large butternut squash, peeled, seeded, and cut into 1-inch cubes
– 6-8 cups water or chicken stock
– 1/4 cup heavy cream (optional)
– Salt and pepper to taste
In a large saucepan, heat the oil or butter and add the chopped onion, cooking until golden (approximately 5-10 minutes). Next, stir in the honey until it bubbles, then add the squash and 6 cups of liquid. Bring to a boil, reduce to a simmer, and cook until the squash is tender, about 30 minutes. After cooling for around 15 minutes, blend until smooth. Optionally, add cream, salt, and pepper, and heat until warm.
Baxter also recommends garnishing with crumbled feta cheese or tamari-roasted pumpkin seeds for an extra touch. These simple additions elevate the soup while providing a delightful crunch.
As winter settles in, Baxter is eager to share more seasonal recipes and welcomes feedback on readers’ favorite winter soups.
