A well-known vegan cheese shop in Austin is set to close its bistro location. Rebel Cheese announced via a newsletter on December 16, 2023, that its bistro at 2200 Aldrich St., suite 120, will cease operations on December 24. Despite this closure, the company aims to maintain its presence in the market through a robust distribution network that extends beyond its retail outlet.
In the newsletter, Rebel Cheese reassured loyal customers that the incoming business will also be completely plant-based and “shares the same heart that we do.” However, the identity of the new tenant has not been disclosed. As of now, the Texas Department of Licensing and Regulation has not listed any new projects at the location.
Rebel Cheese has gained acclaim for its products, appealing to both vegan and non-vegan consumers. “Their delicious products and experience are acclaimed by vegans and non-vegans alike,” the newsletter stated, expressing enthusiasm that the community will continue to enjoy plant-based offerings in the area.
Even with the bistro’s closure, a selection of Rebel Cheese products will remain available in the deli case, including popular sandwiches. Current staff members will transition to roles with the new tenant, ensuring continuity for patrons who frequent the location.
In the final days leading up to the closure, customers can enjoy a 20 percent discount on grocery items and wine until 15:00 on December 24. Gift cards will still be honored for online purchases. Shoppers can activate their gift cards by contacting Rebel Cheese at [email protected].
Since its inception in 2019, Rebel Cheese has experienced rapid growth, particularly after the COVID-19 pandemic prompted a shift to online sales and wholesale distribution. The company now operates a 9,000-square-foot factory and distributes its vegan cheese to hundreds of locations across the United States and Canada.
A significant boost came in 2023 when Rebel Cheese appeared on the television show Shark Tank, where investors Mark Cuban and Lori Greiner purchased a 10 percent stake for $750,000. This exposure has helped enhance the brand’s recognition and financial stability.
For those who will miss the bistro, Rebel Cheese maintains one remaining location in Manhattan, New York. The newsletter concluded with a note of gratitude, stating, “Though we are still a small team, we’ve been so fortunate to have seen such growth and the loyalty of team members and customers alike.” Looking ahead, the company plans to focus on e-commerce, wholesale operations, and its New York location, while expressing excitement for the future of its team.
