Pan & Coffee, a well-known café and coffee business, is set to expand its presence in the San Antonio area by constructing a new location in Boerne. The café plans to begin building later this summer at 27495 Interstate-10 West, an area that will include nearby establishments such as Lamborghini San Antonio, Mission City Church, and Vista Dermatology.
Co-owner Eric Lawitz shared insights about the café’s vision in an interview with What Now San Antonio, stating, “This is an international bakery, coffeehouse, and restaurant. We pride ourselves on being international, combining the best of Mexico and the USA into one restaurant.” This commitment to blending cultures has been a hallmark of Pan & Coffee since its flagship location opened in 2021 on Stone Oak Parkway.
The new Boerne location will feature a modern dining environment and a technology-assisted drive-thru, catering to the evolving preferences of customers. According to the Journal, the café will continue its tradition of offering freshly baked items, including sweet breads that have become a favorite among patrons. Lawitz emphasized the café’s dedication to quality, noting, “Everything is baked in-house. I think the thing people like the most about us is that we have a high-level bakery.”
Construction is expected to commence within the next two to four weeks, with a projected opening date set for mid-2026. Once operational, the café will serve an array of delectable options, including brioche bread, croissants, and traditional Mexican conchas. Breakfast plates and lunch sandwiches will also be featured on the menu, providing a diverse selection for diners.
