The Army has initiated a groundbreaking pilot program featuring a robotic dining facility at Camp Walker in South Korea. Launched by the 19th Expeditionary Sustainment Command on November 12, 2023, this innovative system, dubbed Market 19, aims to modernize military dining operations by introducing autonomous technology in meal preparation.
Soldiers and civilians utilizing the facility will benefit from a touchscreen interface, allowing them to select menu items. The robotic system is designed to automatically portion, cook, and plate meals based on established Army recipes. A display panel provides nutritional information and various food options, including popular Korean dishes such as bibimbap, kimchi fried rice, and budae jjigae.
While the introduction of this automated system marks a significant advancement, it does not eliminate the need for human oversight. According to Chief Warrant Officer River Mitchell, the food advisor for the unit, “Our culinary specialists will still handle food safety, ingredient prep, and quality control.” This approach ensures that the Army maintains high standards in food service while integrating new technology.
The Army emphasizes that the goal of this initiative is not to replace soldiers but rather to enhance their dining experience. “We want to feed them anytime, anywhere,” Mitchell stated, highlighting that automation is seen as a supplement to existing systems rather than a complete replacement. The intention is to allow food service personnel to concentrate on readiness training and improve meal quality.
The pilot program will run for six months, during which feedback will be collected and assessed. This evaluation will help the Army decide on potential future implementations of robotic kitchens at other locations. The initiative falls under the Pacific Multi-Domain Training and Experimentation Capability program, an Army Pacific project designed to test and validate new technologies aimed at enhancing operational effectiveness in the region.
